A little background

According to the distillery, Wattie Boone was the first person to be documented producing bourbon in Kentucky. Preservation Distillery decided to honor this legacy by creating this single barrel whiskey which was distilled at an unknown distillery in Tennessee and aged for 7 years in Kentucky. Wattie Boone & Sons 7-Year American Whiskey is bottled at 94.7 proof and has a retail price of $75.

Color

Golden Honey

Nose

The nose is relatively light and simple, but it works. An initial dose of ethanol dissipates quickly, revealing vanilla candy, plenty of toasted grain, the slightest touch of oak char, and a few muted notes of dried citrus peel.

Palate

Consistent with the nose, the mouthfeel is somewhat thin and initially dominated by toasted grain. A soft spice develops on the tip of the tongue along with some baking spice, plenty of oak, and a few hints of powdered sugar sweetness.

Finish

The finish is medium-long with some soft rye spice transitioning from the palate and a more prominent honey sweetness. The same baking spices mingle with more toasted grain and some oak tannins, creating a relatively dry, bitter finish.

In closing

Wattie Boone & Sons 7-Year is a nice, simple American whiskey that is very easy-drinking and provides a great backstory. There is a nice balance of sweetness that works well with the prominent grain and spice notes that are present on the nose and palate, and the finish was longer than expected. However, this whiskey felt very thin, almost as if it was watered-down, which was very surprisingly given the proof. I also felt that the profile was lacking in terms of complexity and the flavors that are there aren’t terribly well-defined or impressive.
