Still Austin Cask Strength Straight Bourbon

A little background

According to Still Austin, their Cask Strength Straight Bourbon is a “deeper, more “metal” version of their beloved Straight Bourbon, made from a select blend of choice barrels, and bottled at a grow-hair-on-your-chest 118 proof”. Just like their non-cask strength bourbon, this whiskey is made from 100% Texas-grown corn, rye and malted barley and aged at least 2-years. Still Austin Cask Strength Straight Bourbon is limited release whiskey that’s distilled and bottled by Still Austin in Austin, Texas.

Color

Copper

Nose

Brown sugar, egg custard, peaches, lemon/lime citrus, cotton candy, and caramel macchiato. Very enjoyable nose!

Palate

Sweet candy, vanilla, dried oranges, simple syrup, and a touch of cinnamon and cocoa. The palate is sweet, simple, and quite viscous!

Finish

Long and sweet with notes of marmalade, cocoa, brown sugar, simple syrup, and oak.

In closing

It’s always exciting when a distillery releases a cask strength variant of a whiskey you already enjoyed at a lower proof. We found Still Austin Straight Bourbon Whiskey (non-cask strength) to be fantastic, so getting to try it at the full 118 Proof was quite exciting. From the nose all the way to the finish, this is a very enjoyable bourbon that I definitely encourage you to try. Still Austin has set the bar quite high for Texas distilled bourbon!
