A little background
Still Austin Straight Bourbon Whiskey is the distilleries new flagship whiskey and the result of years of effort. This bourbon is made from 100% Texas-grown corn, rye and malted barley and aged at least 2-years. Still Austin Whiskey Co. distills their spirits from their 50-foot tall woman, “Nancy,” their one-of-a-kind Scottish-made still. Austin Still Straight Bourbon Whiskey clocks in at a proof of 100.4 and has a SRP of around $45 bucks.

Color
Burnt Copper
Nose
A bit of alcohol burn is quick to jump out of the glass, along with classic bourbon notes. Caramel, cinnamon, corn, and hints of bread pudding and egg custard are present. Along with a sweet cherry note hidden in there as well.
Palate
Although a tad on the thinner side, the palate on this whiskey is very enjoyable and full of sweet notes of vanilla, spuce, custard, French toast, and dates. It’s quite flavorful and only a touch drying from some subtle oak qualities.
Finish
Still Austin Straight Bourbon Whiskey really jumps back to life on the finish, with a very enjoyable “plume” of flavors. More of the sweet caramel, vanilla, egg custard, and spice linger around for quite some time. It’s hard not go back for more and more!
In closing
For bourbon that’s been aged “at least 2-years”, Still Austin Straight Bourbon Whiskey is not only delicious, but impressive as well. We would have loved to see a more rich and viscous palate, however, for being so young it was still quite impressive and easy to look past. Especially with the delicious egg custard, vanilla, spice, and caramel notes that made the finish so wonderful! Still Austin Whiskey Co. and their 50-foot tall woman, “Nancy,” and really doing some great things down there in Texas and we truly can’t wait to see more great things to come from them. At $45 bucks, Still Austin Straight Bourbon Whiskey is a must buy.
