Nose

The nose is sweet and spicy. Notes of oak, sweet corn muffins, vanilla, and hints of stale cinnamon are present.

Palate

The first sip sweet and has a medium viscosity. Notes of oak, spice, and vanilla are present. The second sip begins with a slight bitterness that is followed by vanilla, caramel, and some rye spice. The third sip begins with a sweet corn note that transitions to oak, tobacco, and hints of a bitter citrus zest.

Finish

The finish is medium and oak forward. As the finish begins to fade, notes of vanilla, baking spice, bitter oak, and vanilla begin to appear.

In closing

The 7-year-old Heaven Hill bottled-in-bond bourbon is well balanced. The nose is sweet and spicy. Notes of oak, vanilla, tobacco, and citrus were present on the palate. The finish is medium and pleasant. Overall, this bourbon is a good one to have on the shelf. Any level of bourbon drinker will appreciate the nod to bourbon history, the well-balanced palate, and fair market price of this bottle.
