Nose

The nose is light and spicy. Dill pickles and baking spices are the most prominent notes. After some time in the glass, notes of cinnamon and baked apples began to appear.

Palate

The first sip is punchy. Heat concentrates in the back palate. There is a burst of clove and baking spices. The second sip concentrates in the mid-palate. Spice, pepper, vanilla, and a faint pickle note are present. The third sip slightly dries the mouth. The intensity of heat begins to rise in the mid palate. Oak, rye spice, and faint hints of cinnamon are present.

Finish

The finish is somewhat spicy and medium to long. The flavors concentrate in the mid and back palate with some heat eventually settling in the chest. Baking spices, dill pickle, faint vanilla and cinnamon are present.

In closing

The Cedar Ridge Malted Rye is a unique craft offering. This whiskey seems to drink a little higher than 86 proof. There are traditional rye whiskey notes present, however, this spirit would benefit from some additional time in the barrel.
