A little background

A few years ago, Buffalo Traced asked Weller Bourbon fans to login to a website and craft their perfect bourbon. The website allows you to choose a desired recipe, proof, warehouse location, and how long you would age the bourbon. The CYPB release is the whiskey consensus of thousands of bourbon lovers. This spirit is a wheated bourbon that ages on the highest tier of the warehouse for eight years until it is bottled at 95 proof. MSRP is set at approximately $40 dollars.

Color

Amber

Nose

The nose is sweet and spicy. Rich caramel and dark fruit notes are accompanied by oak and vanilla. The spirit is slightly astringent. After some time in the glass a faint black pepper note begins to appear.

Palate

The first sip has a thin to medium viscosity. Baking spices, oak, and vanilla are most prominent. The second sip begins with a big caramel note which gives way to black cherry, oak, and vanilla. The Third sip is a heightened combination of the tasting notes listed above, however; a slight bitterness is present.

Finish

The finish is medium in length a pleasant. Rich dark fruit is initially present. This gives way to oak and vanilla. Faint notes of clove and baking spice begin to creep in as the finish begins to fade.

In closing

Weller CYPB was designed and created from a Whiskey Consensus. Bourbon enthusiasts tend to be excited about the Weller products available on the market which hypes up each new release. This eight-year-old wheated bourbon has a rich nose, pleasant palate, and a complex finish. This bottle would make a great addition to any bar. Those accustomed to barrel proof bourbon may find this spirit lackluster. However, those who enjoy a lower proof packed with flavor will appreciate the composition of this spirit.
