Mellow Corn Whiskey

A little background

Mellow Corn is a  Bottled In Bond Kentucky Straight Corn Whiskey produced by the Heaven Hill Distillery. The mash is composed of at least 80% corn and is aged four-years in a once-used Bourbon barrel which results in a lighter, straw-colored spirit. After aging, this corn whiskey is bottled at 100 proof. MSRP is set at approximately $12.

Nose

The nose is light and sweet with notes of sweet corn and honey.

Palate

The first sip has a thin viscosity and is ethanol forward. Sweet corn is the most prominent note. The second sip introduces a slight saltiness to the palate. The third sip reveals notes of young oak, char, and faint hints of cinnamon.

Finish

The finish is medium in length with notes of sweet corn and ethanol. Cinnamon and faint clove notes begin to appear as the finish withers.

In closing

Mellow Corn was named appropriately. Sweet corn is the prominent note on the nose and palate. The interesting notes tend to appear as the spirit opens in the glass and when the finish begins to fade. Sweet corn, young oak, and cinnamon were constant throughout the tasting process. This is an interesting bottle that will not appeal to everyone. If you enjoy the corn forward notes in bourbon, then you should consider giving this one a try.
