Hudson Baby Bourbon Whole Grain Mash

A little background

Hudson Baby Bourbon is bottled at 92 proof and comes in at a retail of around $45. The whiskey is non-chill filtered and is pot-distilled from New York corn by Tuthilltown Spirits in Gardiner, New York. The product is made 100% from corn. Hudson is unique in that they use three gallon barrels to age their whiskey instead of the 53 gallon industry standard barrels.

Nose

The nose is somewhat off putting as the main note is the scent of hay that you might smell at a farm. There are also notes of corn and wheat that don’t really add much to the flavor profile.

Palate

As the whiskey enters the palate, notes of hay and corn make up most of the mouthfeel. There is also an unpleasant burn that is present from front palate all the way to back palate. This whiskey leaves a lingering aftertaste that I wasn’t fond of personally.

Finish

The finish has a little bit of baking spice but mostly consists of the burn and unpleasant aftertaste that were present on the palate.

Complexity

This whiskey lacks complexity and tastes very young and unbalanced.

In Conclusion

To me, Hudson Baby Bourbon tastes like a young whiskey that has not had time to mature. The hay and grain notes are overpowering, and the burn and aftertaste are not pleasant. I would not personally recommend buying an entire bottle of this particular Hudson product until you try it first. We have read mixed reviews on this particular release and might suggest trying it at a bar to see if it’s for you. Hudson is doing some innovative things and recommend keeping an eye out for what they do in the future.
