A little background

Stoll & Wolfe is a whiskey distillery based in Lititz, PA, dedicated to preserving the legacy and reputation of Pennsylvania distilling and its renowned ryes. Founded in 2016 by Dick Stoll—the last master distiller at the historic Michter’s Distillery—and partners Avianna and Erik Wolfe, the distillery revives centuries-old Pennsylvania whiskey traditions using recipes and processes handed down by Stoll, who trained under Charles Everett Beam. The Stoll & Wolfe Pennsylvania Rye Whiskey is a 750ml expression distilled in Lancaster County using local rye and corn, with a mash bill of 60% rye, 30% corn, and 10% malt. Aged for 17 months, it is bottled at 90 proof, non-chill filtered, and priced around $50 USD.

Stoll & Wolfe Pennsylvania Rye Whiskey stands out as one of the more enjoyable young ryes on the market, delivering an exceptional rye-forward experience at just ~$50 with a sweet, creamy palate and smooth mouthfeel that belie its under-two-year age and 90-proof bottling. The aromatic nose of rye spice, honey, caramel, apricot, and green oak gives way to a balanced, sweet-forward palate of cinnamon, brown sugar, clove, vanilla, and oak tannins, finishing medium-long with woody spice, lingering honey, and dry leather. While its youthful profile lacks the depth and oak complexity of older ryes, this craft expression masterfully revives the Monongahela tradition, offering remarkable value, versatility for sipping or mixing, and a heartfelt nod to Pennsylvania’s storied distilling heritage.
