A little background

Redbreast Single Pot Still Irish Whiskey is distilled at Midleton Distillery located in Midleton, County Cork, Ireland which also produces Jameson and Tullamore Dew. This whiskey is made from a mash of malted and unmalted barley and then triple distilled in copper pot stills before matured for 12 years in combination of bourbon seasoned American Oak barrels and Oloroso Sherry seasoned Spanish oak butts. The Cask Strength expression gives a glimpse of Redbreast 12 in its natural, full flavoured taste. This whiskey is bottled at 114 Proof and has a retail price of around $80 USD.

Honey

Nose

Pumpkin custard, vanilla creme, nutmeg, lime citrus, and an overall sweetness.

Palate

Lemon lollipop, vanilla, baking spice, and apricot. A very enjoyable mouthfeel.

Finish

Long and pleasant. Smooth sweet vanilla, spice, fruits, and a touch of oak and barley.

In closing

Wow, experiencing Redbreast 12 at full cask strength is a real treat! The alcohol is exceptionally well integrated, the palate is rich and viscous, and the finish is long and complex. The flavor profile of Redbreast 12 Year Old Cask Strength is very enjoyable, with just the right amount balance of sweet and spice. The regular release of Redbreast 12 Year Old is wonderful, but enjoying it at Cask Strength takes the tasting experience to a while new level.
