A little background
Cadée is a unique craft distillery located in the Pacific Northwest. The company specializes in Maritime Whiskey. Founder, Colin Campbell, implemented 16th-century scotch and blending house methods into his American whiskey-making process. Cadée Distillery is located on the Isle of Whidbey off of Washington State. This island has miles of coastline, salty ocean breezes, and natural resources similar to those in Scotland. The location combined with their blending and aging process aid in creating a pure, clean, and unique spirit. Cascadia Rye Whiskey is aged for at least 4 years in American oak barrels and is finished for 12 months in 20-year-old French Oak Ruby Port barrels. The MSRP is approximately $64.99 and this spirit was bottled at 87 proof.

Nose
The nose is immediately filled with rye spices. A dill note is also present.
Palate
The first sip flooded the mouth with a sweetness that quickly faded to dark roasted coffee and coco. The second sip was completely different than the first. Apple, cinnamon notes were present and changed to malted milk balls (Whoppers). The third sip revealed notes of dark coffee with cream and black cherry.
Finish
The finish was medium with notes of dill, clove, allspice, and sea salt.
In closing
The Cadée Distillery Casadia Rye Whiskey is interesting and complex. The nose was sweet with rye spices. The palate was complex and changed with each sip. Notes ranged from Dark coffee to malted milk balls. The finish was medium and pleasant. This rye is unique. This would make an interesting addition to any bar.
